Breakfast pizza earns its keep because it handles leftovers well. Eggs form the base, last night's potatoes become a topping, and Zombie Breath brings the garlic-and-onion seasoning that ties the whole thing together.
We like using premade pizza dough when the point is breakfast, not an all-morning baking project.
Ingredients
- 5 to 6 eggs
- 1 premade pizza crust or dough
- A few spoonfuls of tomato or pasta sauce
- Cooked potatoes, chopped
- About 1/2 lb cooked ground turkey, optional
- Shredded cheese
- Handful of spinach
- Zombie Breath
Directions
- Scramble the eggs until just underdone. They will finish cooking in the oven.
- Spread a thin layer of sauce over the crust.
- Add the eggs, potatoes, optional cooked turkey, cheese and spinach.
- Dust generously with Zombie Breath.
- Bake according to the crust directions until the crust is cooked and the cheese is melted.
Use the topping list as a starting point, not a rule. Leftover roasted vegetables, different cheeses or another cooked protein all work.
