There is a time and place for chicken bites that bring serious heat. The trick is making sure everyone knows what they're signing up for.
Bone Daddy builds a bold savory base on the chicken. Zombie Ghost goes into the hot honey glaze, where a controlled amount of heat can work alongside sweetness and acidity.
Both blends have real jobs. Neither is there to complete a promotional checklist.
Ingredients
Chicken
- 1½ lb boneless, skinless chicken breast, cut into 1-inch pieces
- 1 tbsp olive oil
- 2 tsp Bone Daddy
- 1 tbsp cornstarch
Hot honey glaze
- 3 tbsp honey
- 2 tsp apple cider vinegar
- 1 tbsp water
- ¼ tsp Zombie Ghost, or less according to preference
- 1 tsp unsalted butter
For serving
- 2 green onions, thinly sliced
- Cucumber slices or celery sticks
- Plain Greek yogurt dip, optional
Directions
- Preheat. Heat the oven to 425°F. Line a large rimmed baking sheet with parchment.
- Season the chicken. Pat the chicken dry. Toss with olive oil, Bone Daddy and cornstarch until lightly coated.
- Arrange. Spread pieces across the baking sheet with a little space between them.
- Roast. Cook for approximately 15 to 18 minutes, turning once. Check the thickest pieces with a food thermometer. Chicken must reach 165°F.
- Make the glaze. While the chicken cooks, combine honey, vinegar, water, Zombie Ghost and butter in a small saucepan.
- Heat gently. Warm over low heat for 1 to 2 minutes, stirring until the butter melts and the glaze is smooth. Avoid boiling it hard.
- Glaze. Transfer the fully cooked chicken to a clean bowl. Toss with the warm glaze until coated.
- Serve. Top with green onion and offer cucumber or celery alongside the chicken.
Heat management
Zombie Ghost is intentionally measured at a small starting quantity. The blend brings serious heat, and individual preferences vary.
Taste the warm glaze carefully before adding it to the chicken. Increase heat only if the people eating want it.
If preparing this recipe for a mixed crowd, serve some Bone Daddy chicken without the glaze. That is a serving accommodation, not an optional omission of the second blend from the published recipe.
Why these blends work together
Bone Daddy establishes the savory seasoning on the cooked chicken. Zombie Ghost contributes concentrated heat to the glaze, balanced with honey and cider vinegar.
The division keeps the heat manageable and preserves the chicken's savory character.
Grillslayer move: Use a separate spoon for tasting the glaze. The chicken must be fully cooked before tossing, and any utensils used on raw chicken stay out of the serving bowl.
