A good sauce can change the direction of several meals without demanding that you start dinner from scratch every time.
Bone Daddy's Cajun-meets-masala character gives this tomato-pepper sauce a bold savory foundation. Make a batch and use it with rice, roasted vegetables, cooked chicken or a bowl of pasta.
Ingredients
- 1 tbsp olive oil
- 1 medium yellow onion, finely diced
- 1 red bell pepper, finely diced
- 3 cloves garlic, minced
- 2 tsp Bone Daddy
- 2 tbsp tomato paste
- 1 can crushed tomatoes (28 oz)
- ½ cup water or low-sodium vegetable broth
- 1 tsp brown sugar, optional
- 1 tbsp lemon juice
- 2 tbsp chopped parsley
- Black pepper, to taste
Directions
- Start the aromatics. Heat olive oil in a saucepan over medium heat. Add onion and bell pepper. Cook for approximately 6 to 8 minutes until softened.
- Add garlic and seasoning. Stir in garlic and Bone Daddy. Cook for about 20 seconds, stirring continuously. Reduce the heat if the spices begin darkening rapidly.
- Build the sauce. Add tomato paste and stir for another 30 seconds.
- Simmer. Add crushed tomatoes and water or broth. Stir to combine.
- Cook. Reduce heat to medium-low and simmer uncovered for approximately 15 minutes, stirring occasionally.
- Adjust. Taste the sauce. Add brown sugar if the tomatoes need a little sweetness. Add lemon juice and black pepper, then taste again before considering more salt.
- Finish. Stir in parsley.
Four ways to use it
Pasta: Toss with cooked pasta and a little pasta water.
Grain bowls: Spoon over rice or quinoa with roasted vegetables.
Eggs: Warm the sauce in a covered skillet and cook eggs in it until they reach a safe doneness.
Prepared protein: Use as a finishing sauce for fully cooked chicken, beef or plant-based alternatives.
Meal-prep notes
Cool promptly in shallow containers and refrigerate. Use refrigerated leftovers within recommended food-safety storage periods or freeze portions for longer storage.
Reheat thoroughly before serving.
Why Bone Daddy works
Bone Daddy provides the signature spice direction while onion, bell pepper and tomato create a versatile sauce base.
Because the sauce is prepared separately, cooks can control how much they add to the finished meal.
Grillslayer move: Divide a batch into smaller containers before refrigerating. Tomorrow's dinner gets a head start without requiring everyone to eat the same thing tonight.
